Manually harvested, followed by meticulous sorting and destemming to ensure optimal fruit quality. Traditional vinification with unstemmed, machine-crushed grapes. Fermented with indigenous yeasts and macerated for 21 days, with daily pump-overs to enhance extraction. Aromas of roasted fig, myrtle and cinnamon. Generous palate of cocoa and smooth, rich tannins.
