Cask Composition & Maturation

Expertly crafted from a marriage of ex-Bourbon barrels, Amontillado, and Pedro Ximénez Sherry butts, Chapter III delivers a deep, layered complexity. After maturation, the component whiskies were vatted and rested in refill sherry butts, allowing time for every element to integrate and harmonise, bringing elegance and cohesion to this robust dram.

• Nose: Rich fruitcake, orange oil, toasted almonds, old leather and a touch of brine

• Palate: Waves of sherried sweetness — dates, fig jam, hazelnut praline — balanced with dry spice, roasted coffee beans, and a silky bourbon warmth
